JUST STARTING

Thank you for visiting my page.  I hope your Valentine's Day was great and you felt the love!  This is my first post so I'm not sure exactly what all I will be putting here. 

The weekend has barely ended and I'm ready for the next.  My mom used to say I was wishing my life away - and I haven't stopped yet.  It seems the older I get the more I like my time off from work.

I will be making CHEESY potato soup this Saturday.  It's VERY rich and calorie laden, but sure is good.  Here's the recipe if you'd like to make it too.

CHEESY POTATO SOUP
5-6 medium red potatoes
2 tablespoons all-purpose flour
1 stick butter
1/4 red onion diced
1 pint heavy cream
4 cups milk
12 oz. Velveeta

Bake potatoes in the microwave.  Peal and dice the potatoes and set aside.  Melt butter in a 3 qt. dutch oven or soup pot over medium heat.  Add onions and cook until translucent.  Add flour - stir.  Add milk; stir until mixture starts to thicken.  Add cream and cheese; continue to stir until the cheese melts.  After the cheese melts, lower the heat and add the potatoes.  Cook for approximately 15-20 minutes.  Serve with cornbread.
